Fried Cabbage

Prepare:

      1 head green cabbage

by cutting it in half, then laying it flat-side down, cut 1/4" strips of cabbage, including the core.

In a hot skillet add:

      1 tablespoon butter
      all the sliced cabbage
       2 teaspoons sugar sprinkled on top

Stir once to get some of the sugar down into the oil. Don't stir too often as some of the the cabbage and the sugar need to blacken (char) in the butter, which is why butter is used instead of olive oil. The blackened cabbage will become sweet tasting.

After some of the cabbage has been blackened, turn down the heat and fry until most of the cabbage wilted and then add:

      freshly ground black pepper, to taste
      salt, to taste

Transfer to a warmed serving dish.

Add fried bacon pieces, cooked fettucini or egg noodles, sprinkle with your choice of cheese.
