Citrus Spinach Salad

Remove stems from, and tear into bite sized pieces:

       1 bag pre-washed spinach

Place spinach in a lareg bowl and add:

       1 - 14-16 oz. can Mandarin Orange sections, drained
       1 - 8 oz. can water chestnuts, thinly sliced
       1/4 pound mushrooms, thinly sliced
       6 strips cooked bacon, crumbled, or
       1/2 cup artificial bacon pieces

Soy Dressing:

Combine:

       1/3 cup salad oil
       3 Tablespoons whhite wine vinegar
       1 Tablespoon soy sauce
       2 Tablespoons brown sugar
       1/2 teaspoon salt
       1/8 - 1/4 teaspoon liquid hot pepper seasoning (or oil)

Chill salad and dressing until served. Pour dressing over salad immediately before serving. Toss.

Serve on chilled plates with hard rolls and butter.
