Baked Orange Roughy - Italian Seasoning

Set oven to 400o

Coat a baking sheet or tray with non-stick cooking spray.

Mix in a shallow dish and set aside:

      1/4 Cup Italian seasoned bread crumbs *
      2 Tablespoons grated Parmesan cheese
      2 Tablespoons grated Romano cheese
      1/4 teaspoon garlic powder
      1/2 teaspoon salt, or to taste

Cut into four equal size pieces and pat dry.

      2 filets (1 pound) orange roughy

Brush onto both sides, or dip both sides into:

      3 Tablespoons of melted butter

Dredge the buttered fish with the dry mixture.
Arrange fillets in a single layer on the prepared baking tray, and sprinkle with

      freshly chopped parsley

Arrange the fish, evenly placed, onto the baking sheet or tray.
Bake in preheated oven for 10 to 15 minutes, or until the fish flakes easily with a fork.

* Or add 1 Tablespoon dry Italian Seasoning to plain bread crumbs.
